What is Tapioca Chip?

Tapioca Chips are made from cassava that has been chopped into small pieces and sun-dried for 2-3 days. As a rule of thumb, 2-2.5 kg of fresh cassava (with 25% starch content) is required to produce 1 kg of chip. The standard for tapioca chip, when sun-dried, must have a moisture content of less than 14% and sand content not more than 3%.

Tapioca chip production in Thailand can be found mainly in the Northeast, East, and Central provinces. Generally, farmers will sell cassava roots to tapioca chip producers for processing. Almost 90% of tapioca chip processed are exported. The remainder are used in various local industries such as the animal feed industry.
